About Our Whole Red Snapper
A whole red snapper is a striking fish and a wonderful one to cook - firm, sweet flesh, a handsome red skin that crisps well, and bones that keep everything moist over the heat. Cooked whole you also get the cheeks and the meat along the collar, the best-eating parts of any fish, which you lose when you buy it filleted.
Ours come cleaned, scaled and gutted, and we will score the sides for you so the heat and seasoning reach the thickest part. It is superb grilled over charcoal, fried until the skin blisters, or laid into a coconut curry. For a boneless option take our red snapper fillet; for the everyday whole fish, our whole tilapia.
How to Cook Whole Red Snapper
- Score each side 3-4 times to the bone so it cooks evenly and takes seasoning inside.
- Dry the skin well before frying or grilling so it crisps rather than sticks.
- Grill 6-7 minutes a side over medium coals, or deep-fry until the skin blisters.
- Stuff the cavity with lemon, ginger, garlic and dhania.
- Cooked when the flesh flakes from the backbone at the thickest point.

Fish is best cooked the day you buy it. If you must keep it, store it in the coldest part of the fridge on a plate over ice, loosely covered, and use it within one day.
