About Our Prawns

Prawns are the fastest thing we sell and the easiest to overcook. They go from translucent and raw to opaque and perfect in about ninety seconds, and from perfect to rubbery in another thirty. Everything about cooking prawns well is about getting them off the heat sooner than instinct suggests.

The visual cue is reliable: a raw prawn is a straight grey C, a perfectly cooked prawn is a tight pink C, and an overcooked prawn has curled into an O. Watch for that and you will never get it wrong. Shell-on prawns are better eating and better value - the shells protect the flesh and make a superb stock afterwards.

They are magnificent grilled over charcoal with garlic butter, fried hard with chilli and lime, or dropped into a coconut curry at the very end. They also make the best possible addition to a mixed grill alongside kingfish steaks. Very high in protein and very low in fat.

How to Cook Prawns

  • Two minutes total for medium prawns. Watch them, do not time them.
  • Raw is a straight C, cooked is a tight C, overcooked is an O. Stop at the tight C.
  • Leave the shells on for grilling - they protect the flesh and add flavour.
  • Devein by scoring along the back and lifting the dark line out.
  • Keep the shells: fried in butter then simmered, they make an excellent stock.

Fish is best cooked the day you buy it. If you must keep it, store it in the coldest part of the fridge on a plate over ice, loosely covered, and use it within one day.
