About Our Fish Fillet

Fillets are what you buy when you want fish on the table in ten minutes and nobody at your table wants to negotiate with bones. Ours are cut and trimmed by hand, pin-boned, and sold fresh rather than sitting in a chilled tray - which with fish matters more than with anything else we sell.

The rule with fillets is that thin cooks fast and thick cooks slow, and most overcooked fish comes from ignoring that. A thin tail-end fillet needs perhaps two minutes a side; a thick shoulder cut needs four or five. If you want them all the same, ask us to cut from the same part of the fish and you will get portions that finish together.

Fillets are ideal for pan-frying skin-side down, for baking in foil with butter and lemon, for a light curry, or for fish and chips. They are lean and high in protein and omega-3s. For the fuller flavour of a whole fish, take our whole tilapia; for something firmer and meatier, look at tuna or kingfish.

How to Cook Fish Fillet

  • Pat completely dry and season just before cooking, not in advance.
  • Skin-side down first in a hot pan, pressed flat for 3 minutes, then 1 minute on the flesh.
  • Baked in foil with butter, lemon and dill: 200C for 12-15 minutes.
  • Cooked when the flesh turns opaque and flakes under gentle pressure.
  • Ask for even-thickness portions if you are cooking several at once.
