About Our Chicken Wings
Wings are mostly skin, bone and collagen with a modest amount of meat, and that is exactly why they are so good. The high skin-to-meat ratio means maximum crisp per bite, and the collagen keeps the little meat there is from ever going dry. No other cut of chicken carries sauce as well.
We sell them whole or split into drumettes and flats - split is easier to eat and cooks faster, whole looks better on a platter. Either way, the secret to a genuinely crisp wing at home is dryness: pat them completely dry, or better still leave them uncovered in the fridge for a few hours, and toss them in a little cornflour or baking powder before they go into heat.
Wings are the natural centre of a game-day or party spread. Order them alongside drumsticks, our house beef sausages and a batch of samosas from the deli section and you have the whole table covered. We can prepare larger quantities with a day's notice.
How to Cook Chicken Wings
- Dry them thoroughly - wet wings steam instead of crisping.
- A light dusting of cornflour or baking powder gives a much crisper skin.
- Oven: 220C for 40-45 minutes, turning once. Deep-fry: 8-10 minutes at 180C.
- Sauce them after cooking, not before, or the coating burns.
- Split into drumettes and flats for faster, more even cooking.

Three to four days in the coldest part of the fridge, loosely covered so the surface dries rather than sweats. To freeze, portion into meal sizes, press flat, wrap tightly and label. Thaw overnight in the fridge, never on the counter, and do not refreeze thawed raw meat.
