About Our Beef Samosa
Samosas are the most Nairobi thing on this page, and the beef one is the original. Ours are hand-folded in the deli with a spiced beef mince filling, sealed properly at the corners so they do not burst, and sold raw so you can fry them at the moment you want to eat them rather than reheating something that went soft an hour ago.
The minimum order is 10 pieces at KSh 50 each. That is not us being difficult - it is the batch size that makes sense for hand-folding, and honestly ten samosas is not a lot once they hit the table. Order more for a party; we make them to order and larger quantities are no problem with a day's notice.
Fry them from chilled in oil at about 170C, not hotter - too hot and the pastry browns before the filling is heated through. They should come out golden and blistered, and they must be drained standing on their edge, not lying flat, or the bottom side goes soft. Order them with our chicken samosas and mshikaki for a proper spread.
How to Cook Beef Samosa
- Fry at 170C, not hotter - the filling needs time to heat through.
- 5-6 minutes, turning once, until deep golden and blistered.
- Drain standing on edge in a colander, never flat on paper, so they stay crisp.
- Air fryer: brush with oil, 190C for 12 minutes, turning once.
- They freeze raw very well - fry from frozen, adding 2 minutes.

Yes, and at no extra charge - it is the whole point of buying from a butcher rather than a chiller cabinet. Tell us the thickness, trim, portion size or preparation you want in the notes when you order, or just describe what you are cooking and let us choose.
