About Our Chicken Samosa

The chicken samosa is the lighter half of the pair. The filling is spiced chicken mince with onion and herbs, and because chicken carries spice more transparently than beef, the seasoning comes through more clearly - you taste the cumin, the dhania, the chilli, rather than the meat plus spice.

Like our beef samosas, these are hand-folded in the deli and sold raw at KSh 50 per piece with a minimum of 10. Frying them yourself is genuinely worth the five minutes: a freshly fried samosa has a shattering pastry that a reheated one simply does not, and the difference is not subtle.

The same rules apply - moderate oil temperature, drain on edge, serve immediately. They are also excellent in an air fryer if you would rather not deep-fry. Take a mixed dozen with our beef samosas, and add chicken wings if you are feeding a crowd.

How to Cook Chicken Samosa

• Fry at 170C for 5-6 minutes until deep golden, turning once.
• Drain standing on edge so the underside stays crisp.
• Air fryer: brush with oil, 190C for 12 minutes.
• Serve immediately - samosas soften within 15 minutes of frying.
• Freeze raw and fry from frozen with 2 extra minutes.
