About Our Mutton Mince

Mutton mince, or keema, is a different proposition from beef mince. Mutton has a stronger, sweeter, more distinctive flavour and a higher fat content, both of which make it the right choice for heavily spiced cooking - keema matar, kofta, seekh kebab, samosa filling, shepherd's pie. Where beef mince is a blank canvas, mutton pushes back.

We grind ours fresh from quality cuts rather than trim, which is the difference between mince that browns and mince that boils in its own water. The fat content is what makes koftas and seekh kebabs hold together on a skewer without egg or breadcrumb, so do not ask us to grind it too lean if that is what you are making.

Mutton mince stands up to bold spice: cumin, coriander, garam masala, chilli, plenty of ginger and garlic. It also freezes well, so it is worth taking more than you need. When it is out of stock, our chicken mince is the closest substitute for keema, though far milder. We also press meatballs in the deli section.

How to Cook Mutton Mince

  • Brown in a hot dry pan in batches - crowding makes it stew instead of sear.
  • Drain some rendered fat if your dish is delicate; keep it for koftas.
  • The fat content means koftas and seekh kebabs bind without egg.
  • Give it 30-40 minutes of simmering after browning - mutton mince improves with time.
  • Freezes well in flat, labelled portions.

Use within one to two days from the coldest part of the fridge - mince, offal and deli items are more perishable than whole cuts. To freeze, portion flat, wrap tightly and label with the date.
