About Our Goat Trotters

Goat trotters are mostly skin, bone and tendon, which sounds unpromising until you know what all that connective tissue becomes after a few hours in a pot: gelatine, and a broth with a body no shortcut can fake. Like our beef trotters, they are a Saturday-morning soup fixture and a genuine restorative, and a couple dropped into any goat stew will thicken and enrich the whole pot.

We clean and cut them so they fit a domestic pot and release their gelatine faster. Budget a genuinely long cook - three hours or so, or about an hour under pressure. Finish the soup with plenty of pepper, dhania, chilli and lemon. They belong on the same table as our goat head and goat matumbo.

How to Cook Goat Trotters

  • Scrub well, then blanch for 10 minutes and discard that first water.
  • Simmer three hours or so, or about an hour in a pressure cooker, until the skin is soft.
  • Add a couple to any goat or beef stew for a thicker, glossier sauce.
  • The liquid sets solid in the fridge - that is pure gelatine, keep it.
  • Finish the soup with black pepper, dhania, lemon and chilli.

Yes, every day. Order before 4:00pm on 0707 700511 for same-day chilled delivery across Nairobi. Delivery is a flat fee by area, from KSh 300 to KSh 1,000 depending on where you are, and it is added to your basket total automatically. See the full fee table.
Three to four days in the coldest part of the fridge, loosely covered so the surface dries rather than sweats. To freeze, portion into meal sizes, press flat, wrap tightly and label. Thaw overnight in the fridge, never on the counter, and do not refreeze thawed raw meat.
