About Our Beef Blade (Gichiri)

Blade - gichiri - is cut from the shoulder, a hard-working part of the animal that carries a line of connective tissue running through the middle of the steak. That line is the whole story: cook it fast and it is chewy, but braise it slowly and it melts into gelatine, leaving you with a deeply flavoured, tender cut at a fraction of the price of a loin steak.

It is one of the best-value cuts on the counter for a wet fry, a stew or a pot roast. Brown it hard, then let it simmer covered with onion, tomato, garlic and ginger until it gives way. Some cooks cut the gristle line out and use the two lean halves as a quick-cooking steak; either way you are getting a lot of flavour for the money. If you like this style of cooking, our short ribs reward the same patience.

How to Cook Beef Blade (Gichiri)

  • Brown hard first - the caramelisation is where much of the flavour comes from.
  • Braise covered for two hours or so, until the central line has softened.
  • Or cut out the gristle line and treat the two lean pieces as a quick steak.
  • Finish a wet fry by reducing the sauce hard at the end.
  • Pressure cooker: about 40 minutes gets it tender.

Three to four days in the coldest part of the fridge, loosely covered so the surface dries rather than sweats. To freeze, portion into meal sizes, press flat, wrap tightly and label. Thaw overnight in the fridge, never on the counter, and do not refreeze thawed raw meat.
