About Our Kienyeji Chicken

Kienyeji chicken is a different animal from a broiler, and it needs to be cooked like one. These are indigenous, free-ranging birds that grow slowly and actually walk around, so the muscle is denser, the legs are darker, and the flavour is far more pronounced. There is less fat and more connective tissue. Roast one like a supermarket chicken and you will be disappointed.

Cooked properly, though, there is nothing like it. Kienyeji wants time and moisture: a long, gentle simmer in a covered pot with onion, tomato, ginger and dhania, until the meat is tender enough to fall off the bone. That is the traditional Kenyan preparation and it is the correct one. The resulting broth is rich enough to serve as a soup in its own right.

Kienyeji is the bird for occasions - visitors, celebrations, Sunday lunch when someone has come a long way. It costs more per kilo than a broiler because it takes months rather than weeks to raise. We source ours from suppliers we have used for years and sell them whole. Ask us to joint it for you if you want it stew-ready.

How to Cook Kienyeji Chicken

  • Do not dry-roast it. Kienyeji needs moisture and time.
  • Simmer covered for 90 minutes to 2 hours with onion, tomato, ginger and dhania.
  • Pressure cooker: 30-35 minutes, then reduce the sauce down uncovered.
  • Brown the pieces first for colour, then add liquid and let it go slowly.
  • Keep the broth - it is far richer than broiler stock and makes an excellent soup.

Three to four days in the coldest part of the fridge, loosely covered so the surface dries rather than sweats. To freeze, portion into meal sizes, press flat, wrap tightly and label. Thaw overnight in the fridge, never on the counter, and do not refreeze thawed raw meat.
